New Years Cupcakes!

I call these New years cupcakes because we made them together the first time on new years eve last saturday. My four year old and I love to cook and bake together, she especially loves baking. We also make an awesome chocolate chip banana bread together which I'll post the recipe of one day. I usually let her measure and mix and I take care of the clean up and oven stuff. (Of course she gets to lick the mixing bowl!) Baking and cooking together has also helped her math a lot.

After the cupcakes cooled she decorated these all by herself with icing and sprinkles. Needless to say she was very proud of herself and so was everyone else that saw them and tasted them, they were sooooo good. Here's the recipe below:

1 3/4 cups all purpose flour
1 cup brown sugar
1/4 cup unsweetened baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup milk
1 egg, slightly beaten
1/3 cup canola oil
1 teaspoon vanilla
1 cup chocolate chips

1. Set oven to 350 degrees.
2. Line 12 regular size muffin tins with paper liners.
3. In a mixing bowl, mix together the flour, brown sugar, cocoa, baking powder, baking soda, salt and cinnamon; mix with a wooden spoon to combine.
4. In a small bowl whisk together the milk, egg, oil and vanilla.
5. Add the wet mixture to the dry ingredients; mix very well with a wooden spoon to combine well.
6. Mix in the chocolate chips.
7. Divide the batter evenly between the lined muffin tins.
8. Bake for 22-25 minutes, or until a toothpick inserted in the middle comes out clean.
9. Cool, and frost with favorite chocolate frosting and decorate with sprinkles.
10. Enjoy and try not to eat all at once!
